Za’atar Roasted Cauliflower
This za’atar roasted cauliflower recipe is an absolute game changer.
I’ve been reading about roasting as a cooking method for cauliflower and I’m not sure why but I wasn’t too mad about the idea. It was probably the thought of moving away from my much loved cheesy cauliflower gratin. I needn’t have worried. This is like a whole different vegetable and za’atar roasted cauliflower is the way to go.
If you’ve never heard of za’atar, please don’t be scared. It’s only your common herbs (thyme oregano, marjoram), tossed in with some sumac and sesame seeds. You will find it in your local asian shop. It has a warm depth and lemony scent. It’s flavour over heat and it will never overpower your dish. It’s a winner.
Cauliflower is good for you. Low in calories and carbohydrates but high in fibres.
It is a versatile vegetable which is as delicious cooked or raw simply dipped in homemade mayonnaise. Za’atar roasted cauliflower will win your heart. And your belly.
Ingredients:
1 cauliflower; half a bulb of good garlic; table spoon of za’atar; olive oil.
Method:
- Slice your cauliflower and place it on a tray lined with baking parchment.
- Add your garlic and drizzle with olive oil.
- Sprinkle your spices.
- Place in a pre heated oven (180 C/ gas mark 5).
- Leave for 25 min or until the cauliflower is golden brown!
