The Weekly Salad – Fiery Cucumber
I don’t know about you, but I’ve always got some cucumber knocking around on the veggie trolley! I love it “a la croque au sel” but every now and then I like to give it a bit of a boost.
Ingredients:
1 cucumber, bitta grated ginger, a sprinkle of shredded chili, seeds (sesame seeds are lovely here), 1/2 lemon, 1 tbsp of soy sauce, 1 tbsp of toasted sesame seed oil.
Method:
Chop the cucumber and salt it. Leave it a colander for half an hour. Rinse and dry it roughly with kitchen paper. Grate the ginger, chop the chili and throw it in with the cucumber and seeds. Mix the lemon juice, soy sauce and oil and coat the cucumber. Don’t put too much of the dressing on as it will make loose its crunch otherwise.
