The Weekly Salad – A Mediterranean Fiesta

Simple and summary. Every thing that this week is not. You’ll likely have a lot of these ingredients at home. 

 

Ingredients:

Red peppers, chick peas, feta, almonds, lemon juice, basil and olive oil.

Method:

Roast the peppers whole in the oven for 20 min at 180 C or gas mark 5. Let them cool down for  minutes and slice them in two. Sprinkle the chick peas, feta and almonds over the peppers. Drizzle with the lemon juice and olive oil. Season to taste and add basil. Voila!
