Spiced lentils and tahini
Hot and spicy and ideal if you’ve got a cold!
Ingredients:
250 g red lentils, spices and lots of it (this depends on your own taste but I use: chilli, ginger, turmeric), 3 cloves of garlic, a heaped table spoon of black sesame seeds, a heaped table spoon of tahini, juice of 1 lemon, 2 shallots finely sliced. Salt and pepper. Handful of cherry tomatoes.
Method:
Slice the shallots and cover them in lemon juice.
Boil the lentils, rinse and reserve. In a frying pan, heat up some oil, add the spices of your choice and black sesame seeds, mix in the lentils, tahini and lemon juice, grate the garlic and add the tomatoes in and leave to heat up for about 5/10 min on medium heat.
Season to taste and serve with the drained shallots on top. Delicious on naan bread or pitas.
