Simple Lentil Salad
This is a recipe from a good friend in Belfast, so thank you Clare. It’s a really delicious thing of beauty, to be eaten on its own or as an accompanying dish. A good Houmus and some pittas and you’ve a meal on it’s own… and I like Lebanese Houmus like this recipe
Ingredients
Dark Green Spotted Lentils (That’s what it says on the bag or you can use Puy if that’s what they call them) I use about a cup and half for this recipe but quantities are up to you depending on how many you’re serving.
One Red Onion
One clove of Garlic (or more if you like it)
Two large, ripe tomatoes,
Feta Cheese
Large bunch of Parsley, curly is fine.
Lemon Juice (preferably freshly squeezed)
Extra Virgin Olive Oil
Salt and pepper
Rinse your lentils and boil them in unsalted water until soft but still with a tiny bit of bite, 15 to 20 minutes or more sometimes, you’ll have to check yourself.
Drain them in a colander, rinse them under the tap to get rid of the cooking liquor and set them aside to cool. When they are cool throw them in a serving dish.
Finely dice the onion and garlic and chop the tomatoes and parsley, then mix into the lentils.
Pour on a good glug of olive oil, the juice of one lemon (or more if you like it). Salt and Pepper to taste.
Mix the dressing through the lentils and then crumble the feta cheese over the top.
Finish with a sprinkle of Parsley and enjoy.
