Sesame & Peanuts Noodles
I’ve been trying to eat less meat and this recipe came in super handy. It’s filling and fragrant and can be eaten warm or cold and on the go. There’s a good bit of freshness and crunch to it. Perfect for a cheap lunch option!
Ingredients:
For the dressing: 1 tbsp of toasted sesame seed oil; 1 tbsp of another oil of your choice (I used pumpkin seed oil); 1 good dash of soy sauce; 2 tbsps of sriracha sauce; 2 tbsps of sweet hoisin sauce; 2 heaped tbsps of smooth peanut butter; juice of 1 lime; 1 clove of garlic; 1 shallot.
For the noodles: 500 g of noodles of your choice (I used the wholemeal egg noodles);1 handful of sugar snaps; 1 red pepper; 1 pack of beansprouts; handful of peanuts; sesame seeds.
Method:
For the dressing, thinkly shave your shallot and grate your garlic and mix with all the ingredients.
Cook the noodles, rinse and drain. Toss the beansprouts, cut pepper and sliced sugar snaps, toss the dressing into the noodles and sprinkle with the peanuts and sesame seeds. Enjoy!
