Roasted Butternut Squash

I’ve no work at the moment and let’s just say that things are tight. So I’m all about the finding good things to eat on a very strict budget.  I’d bought this butternut squash for โ‚ฌ0.39 in Lidl a couple of weeks ago and figured it was time to use it before it went into the bin. No more wasting for me!

So you slice and gut the squash. Sprinkle with olive oil and herbes de provences. Salt and pepper generously. Drop a few garlic cloves (whole- please don’t peel them!). Cook in a hot oven (200 C or gas mark 6) for about 30 min. 

Shred a few sugar snaps for a bit of freshness and crunch.

You could always spice it up a bit as well with a drizzle of lemon juice and some chili flakes. You could even go wild with some feta and a few walnuts. But personally, I like it simple.
