Roast pork steak with seasonal greens
A quick and easy sunday lunch for a family of 4!
Ingredients:
1 pork steak (1 kg is the general average size in the super market); 2/3 table spoons of pesto, juice of on small orange, 1 large onion, cracked black pepper and some salt.
For the vegs, use what ever green veggies you happen to have. For me today it will be courgettes and green peas. And whatever fresh herbs I could get my hands on. So mint and sage!
Method:
Preheat the oven to 200 C. In the meantime, peal and chop your onion, place the meat over it and spoon the pesto directly on to the mean like so. Pour the orange juice over it (gently so that it doesn’t wash off the pesto) and sprinkle your black pepper.

Place the meat in the oven for 45 to 50 min.
Pan fry your vegetables and herbs in the juices from the roast while the meat is resting.
Serve the meat on a bed of vegetable with a drizzle of the juices. It’s really tasty!
