Refreshing Estonian Salad

This one is lovely served with salty or spicy meat. It’s of course just gorgeous with no meat! It goes great alongside some simple roasted potatoes or spicy roasted cauliflower!

Sour cream is a staple of Estonian Cuisine and it is the most common salad dressing (often spiked with a bit of mayo!). You will be offered hapukoore with almost everything!


1 cucumber, 2 tomatoes, dill, 3 tbsp of creme fraiche/ sour cream or Greek Yoghurt, salt, pepper.


Peel and chop the cucumbers. They should be chopped thick enough so that they still have a bit of a crunch after the salting.

Place them in a calendar and pour a generous amount of salt over them. Leave them to drain (the salt draws the water out) for about an hour.


After about and hour, rinse well and remove excess water with kitchen paper. Place the cucumber in the salad bowl and add the chopped tomatoes, add, the sour cream and fresh dill (I buy it fresh and freeze it, it’s much fresher and tastier than the dry stuff) and black pepper. Taste and add salt to taste. Voila!
