One of my go to dinners at the moment. I buy sausage meat from @villagebutcher because it's seasoned just to my taste (lots of garlic, bit of chili and some fennel seeds) but you could use any mince meat and season it the way you like.

I flash fry it and then spoon it in lettuce leaves. If I'm feeling very fly I'll sneak some roasted laver seaweeds sheets in the leaves. I buy those in bulk from @asiamarketie

Using this photo of gloriously fresh Irish leaves to let you know that I've taken on the role of Secretary for @foodwritersguild - not bad for someone with my accent all the same 😉 now to tuck in a pound of celebration cheese.

A super wholesome lunch which took me no time to p

A super wholesome lunch which took me no time to put together. I used @nissincupnoodles_uk (the spicy sesame seed oil noodles) and some Korean roasted seaweed both bought in my favourite weekend hangout @asiamarketie!

To make this bowl of ramen I used the noodles as per above and cooked them as per the instructions, I steamed an egg for 6 min or so and crumpled a few seaweed sheets. That 👏 is 👏 it. 👏

I think I am the queen of lazy ramen and I'm entering this one in the @asiamarketie competition 🙏

A combination you'll want to save for those days y

A combination you'll want to save for those days you can't think but want something tasty and frankly a bit tarty!

Cut everything in small cubes if you want, I think it's more fun to eat when everything is roughly the same size.

For this you will need: a small can of sweet corn, 2 or 3 branches of celery, some good strong cheese (I went for @hegartycheese 's Templegal which has a good funky bite), scallions, shallots, glorious sticky dates, a few slivers of chorizo, lots of fresh herbs (I mixed mint, dill and celery leaves).

The dressing was lime juice, olive oil and Korean chili flakes.
