Kale Pesto


250 g of kale (€0.49); 2 lemons (€0.30); 2 large cloves of garlic (€0.10); 100 g of parmesan cheese (€1.50); 250 ml of olive oil (€1.75); walnuts (€1.00). 

I got a good 5 medium jars out of €5.14 so we’ll say about €1.00 a jar. It will freeze nice and easy as well so worth making a generous batch!


250 g of curly kale; juice of 2 lemons; 2 large cloves of garlic; 100 g of parmesan cheese; 1 handful of walnuts; 250 ml olive oil; salt to taste.


Blanche three quarter of the kurly cale and keep the rest uncook for a bit of texture in your pesto. In the food processor place your garlic, cheese, nuts and lemon juice and top with the kale, pour the oil in and blend. Season to taste. 

As an extra if you have some fresh thyme, you could throw in a few leaves for a bit of debth.
