Grilled Marinated Prawns Recipe
This recipe for marinated prawns is a quick meal option with a twist you won’t forget.
I came up with this recipe for marinated prawns after impulse buying a whole lot fish and seafood from the Fitzimons fish stall at the Green Door Market . If you’ve never been to this market you should try and go. It’s got everything you want. Fish, meat, vegs, bread, pulses, flowers, olives and cheese. Everything. I love an hour spent strolling there.
When I buy prawns I very often end up doing marinated prawns fritters, but on that day, I had neither the time or the inclination. It had to be quick, it had to be light and it sure as heck had to be tasty.
There are many a way to make marinated prawns. You could use yoghurt as a base, or an oil or something with a bit more of a kick. You can use dry rubs or wet marinades. There are no wrong ways to do this. The marinating really is easy. You just have to go with your palate. Cooking the prawns maybe a tad more tricky as you want to make sure you don’t over cook them. You can bulk up these marinated prawns with some fluffy basmati rice, or some dirty rice (long grain rice with black eye peas or pinto beans and a few dabs from a scotch bonnet chili).
Ingredients
- 12 prawns or so per person
- 1/2 shot of tequila
- 1 tea spoon of grated ginger
- 1 large clove of garlic
- 1 table spoon of peanut oil
- juice of 1 ripe lime
- Maldon salt to taste
- 1 table spoon of cracked black pepper.
- 1 teaspoon of nam pla (fish sauce)
Step by Step Guide To Marinated Prawns
- Rinse your prawns and pat them dry with some kitchen towel.
- In a large bowl, mix the ingredients for the marinade (oil, tequila, lime juice, grated garlic and ginger and fish sauce).
- It looks to me like you also have the ingredients to a decent tequila slammer (lose the fish sauce!), so why not do a sneaky shot while the prawns marinate?
- Leave the prawns to marinate for up to 30 min in the juices. By then they should be back up to room temperature which is important when it comes to cooking them.
- Fire up your griddle pan and brush it with oil. You want this to be screaming hot.
- Place your prawns on the grill for 90 seconds maximum and then flip them and leave them there for another minute or so.
- Season with the maldon salt and the pepper.
