Fennel Salad

Fennel Salad

I had something resembling this in a restaurant recently and it really hit the spot. It’s sharp and clean tasting and so very healthy if you forget about the bacon bits. They’re only optional, you know.

Ingredients:

1 fennel, 1 small shallot sliced finely, 1 bit of feta, cherry tomatoes, sesame seeds, salt, pepper, sherry vinegar and olive oil, bacon bits if you like (I like).

Method:

Top and tail the fennel and slice it up finely. Plunge it in boiling water for about 5 to 7 minutes and run it under cold water to stop the cooking process. Toss it in with the rest of the ingredients and voila. It’s sooooo good! If you don’t put the bacon in this is a really gorgeous vegetarian dish.
