Lads. lads. I’m bringing sexy back. And by sexy, I mean the 80’s. So grab your shoulder pads, back comb your hair and put on your leg warmers and follow me into the kitchen.
Now thing hard and put on your favourite 80’s single. I know it’s hard to choose as there were just so many great ones but you can do it. If I go international for me it’s got to be A-Ha’s Take On Me. Can’t beat Morten’s falsettos. Or if I stay closer to my root anything from good old Jean-Jacques Goldman and you’ve got a very happy Kat.
Anyways, take 12 beautiful fresh eggs and place them in a large pot of boiling water. They must be fully submerged. Cover the pot and let it boil for 10 to 12 min depending on the size of the eggs (the larger they are the longer you leave them in the water).
While the eggs are cooking, revive your youth by watching 10 minutes of the A Team. Or MacGyver. Eighties TV was good TV. Pause the episode and drain your eggs. Place them in cool water for the rest of the episode. Thank your lucky star that you no longer have to rewind the tapes.
Hitch up your leg warmers, those bastards are always sliding down. Peel your eggs. Gently. You want the eggs looking good and not like and 80’s hair cut. There will be no mullet on my plate! No sir, no way.
Once they’re peeled, cut them in half. I found wetting a sharp knife in hot water really helped out. Scoop the yellows out in a side bowl and sing Voyage Voyage as you go along.
Mash the 12 egg yolks with a table spoon of mayo, half a teaspoon of ginger powder, half a teaspoon of chili powder, 1 grated clove of garlic, salt and pepper. Mix until it’s all lovely and smooth and tasty with just a hint of heat. Just like Jason Donovan in Neighbours. Place a tea spoon of the mixture back in each half egg. Sprinkle with paprike. Et voila, sexy is back!
