Chinese Chicken Broth
I needed to eat something clean, warm and light tonight and did just the job.
2 chicken breasts, 1 head of chinese cabbage, 2 bunches of scallions, 1 tablespoon of 5 spices, 250 g of sliced mushrooms, 2 vegetable stocks, 3 shots of rice vinegar, 1 shot of toasted sesame seed oil
Shred the cabbage. Top and tail the scallions. Place everything apart from the mushrooms and the oil in the pot and cover with boiling water. Let it all boil happily for 15 min. Remove the chicken breasts and shred them. In that time add the sliced mushrooms to the pot. Put the chicken back in and let it cook for another 5 min. Pour the oil at then end and enjoy.
