Chiffonade de Courgettes
My auntie from the south west of France gave me this recipe. She’s mad for courgettes and is always coming up with different ways of eating them. I think this is by far my favourite. It’s fresh and different and the texture is just the right side of crunchy. I’m sold and hope you will be too!
1 (firm) courgette per person, balsamic vinegar, salt, pepper and oil of your choice (I used a drizzle of olive oil and a few drops of sesame seed oil). If you use 1 tbs of vinegar you use 2 tbs of oil.
Shave the courgette in the length with a vegetable peeler and place in a dish. Season and drizzle with the oil and vinegar. Don’t let it sit more than 10 min before serving so you keep the crunch.
Easiest side dish ever!
