This is a very easy recipe for those who love sun-dried tomatoes and want a cheap alternative that’s just as tasty. I used about 1 kilogram of tomatoes from Super Valu that worked out around โฌ3.
Put your oven on to the lowest temperature, or close to it. I set mine to about 100 degrees C. Halve the tomatoes and scoop out the seeds and liquid centre so your just left with the fleshy part of the fruit. Sprinkle a little olive oil onto a big enough baking tray and place tomatoes open-side facing up. Next season the tomatoes. I used about a teaspoon each of salt, crushed black pepper, and mixed herbs (I’d say oregano would be particularly tasty on this). This gives a subtle hint of seasoning when they’re done, but feel free to play around with quantities to suit your taste.
Finally, place the tomatoes into the oven until they’re dried out like in the photo. I left mine in for 5 hours, but at such low temperatures the time on this scale isn’t very important.
I washed a jar and sterilised it with boiling water. I stuffed in the tomatoes and poured in some olive oil to coat them, ready for use.
