Roasted Courgettes

Ingredients:

2 medium courgettes; 2 cloves of garlic; lemon juice; olive oil; fresh or dry thyme; chili flakes; salt and pepper; feta cheese. 

Method: 

Preheat the oven to 180 C (Gas mark 5/6). Cut your courgettes in thick slices, drizzle with olive oil, season with the salt, pepper and chilli flakes. Place in the oven for 30 min. Remove from the oven and drizzle a bit of lemon juice. Chop the feta on top and add the fresh thyme (if you are using dry thyme please sprinkle directly on the courgettes before roasting).
