GF Vanilla and Blueberry Cookies
So these are super quick and easy to make. I occasionanally get to bake with someone who is coeliac so I enjoy trying to make him something a bit different every time. You may how ever wish to decorate them with a different design. Suffice to say, I made a bit of a boob out of that one!
450 g rice flour; 2 large eggs; 200 g of butter; 200 g of sugar; 1 tbsp of vanilla essence; blueberries to taste.
Preheat the oven to 180 C (gas mark 6). Ensure your butter is at room temperature otherwise it’ll be a bit of a struggle. Cream the butter and sugar together. Add the eggs and when they are fully incorporate add the vanilla and the flour. Spread your pastry about half a centimetre thick and cut rounds out with a mug. Place the blueberries on top. Lift gently on a baking paper lined tray and place it in the oven for 15 to 20 min.
